Introduction 

Gin is defined not only by its botanicals, but by the process through which it is crafted. Distillation is where flavour, balance, and character are carefully brought together. 

The Base Spirit 

The process begins with a neutral spirit, typically distilled from grain, This provides a clean foundation upon which botanicals can build. 

Adding the Botanicals 

Juniper is essential in all gin, giving it its signature profile. Alongside this, citrus peels, herbs, and spices are added to create depth and complexity. 

These botanicals are either steeped in the spirit or infused during distillation. 

The Distillation Process 

The spirit is gently heated in a still, often copper, which helps refine and smooth the liquid. As the alcohol vapours rise, they carry the essence of the botanicals with them. 

This vapour is then condensed back into liquid, capturing the flavours in a balanced and controlled way.
